Filet Mignon with Béarnaise Sauce

Ingredients
  1. 2 (6- to 8-ounce) beef tenderloin filets
  2. 1 teaspoon kosher salt
  3. 1 teaspoon ground black pepper
  4. 1 tablespoon unsalted butter
  5. Béarnaise Sauce (recipe follows)
  6. Garnish: chopped fresh tarragon
Instructions
  1. Preheat oven to 425°. Sprinkle filets evenly with salt and pepper.
  2. In a cast-iron skillet, melt butter over high heat; add filets, and cook for about 2 minutes per side. Place skillet in oven, and bake for 4 minutes or until a meat thermometer inserted in thickest portion registers 130° for medium-rare or 145° for medium. Serve with Béarnaise Sauce. Garnish with fresh tarragon, if desired.

Béarnaise Sauce

Ingredients
  1. 1/4 cup dry white wine
  2. 3 tablespoons champagne vinegar
  3. 1 shallot, thinly sliced
  4. 2 teaspoons black peppercorns
  5. 1 sprig fresh tarragon
  6. 4 egg yolks
  7. 1/2 cup melted butter
  8. 2 tablespoons chopped fresh tarragon
  9. 1/2 teaspoon kosher salt
Instructions
  1. In a small skillet, combine white wine and next 4 ingredients. Bring to a boil over medium-high heat; reduce heat, and simmer until liquid is reduced by half. Strain mixture, discarding solids, and set aside to cool.
  2. In the top of a double boiler, whisk together wine mixture and egg yolks. Place over simmering water, and whisk constantly for 5 minutes or until egg yolks appear ribbonlike. Gradually whisk in butter until combined; stir in tarragon and salt.
