Strawberry Cobbler

Nothing says summer like a heart-warming Strawberry Cobbler! Topped with brown sugar, cinnamon, and almonds, this dessert will remind you of summer days spent relaxing in the backyard catching lightning bugs, or the classic scent of a home-cooked meal wafting from grandma’s kitchen. Serve in small cast iron skillets atop classic red linens for an added down-home feel.

  1. 1 (32-ounce) package fresh strawberries (tops removed), quartered
  2. 3⁄4 cup sugar, divided
  3. 1⁄2 cup plus 3 tablespoons all-purpose flour, divided
  4. 1 tablespoon lemon juice
  5. 1 teaspoon ground cinnamon
  6. 1⁄4 cup firmly packed light brown sugar
  7. 4 tablespoons butter, chilled
  8. 1⁄4 teaspoon almond extract
  9. 1⁄4 cup sliced almonds
  1. Preheat oven to 350°. In a medium bowl, toss together strawberries, 1⁄2 cup sugar, 3 tablespoons flour, lemon juice, and cinnamon. Spoon evenly into 8 (6-ounce) ovenproof dishes. In the work bowl of a food processor, place remaining 1⁄4 cup sugar, 1⁄2 cup flour, brown sugar, butter, and almond extract. Pulse until dough resembles coarse meal. Fold in sliced almonds.
  2. Sprinkle about 1⁄3 cup topping over each dish, and bake for 30 minutes, or until topping is golden brown and filling is thick and bubbly. Let cool slightly before serving.
