Steak Fajita Egg Rolls

Ingredients
  1. 1 tablespoon olive oil
  2. 11⁄2 pounds flank steak, cut into 1⁄4-inch pieces
  3. 1 red bell pepper, chopped
  4. 1⁄2 cup chopped onion
  5. 3⁄4 teaspoon salt
  6. 1⁄2 teaspoon ground black pepper
  7. 1 (15-ounce) can corn, drained
  8. 1 (15-ounce) can black beans, rinsed and drained
  9. 1 (8-ounce) package Monterey Jack cheese with peppers, shredded
  10. 1 (4-ounce) can diced green chiles, drained
  11. 1 teaspoon garlic salt
  12. 1 teaspoon ground cumin
  13. 24 wonton wrappers
  14. Vegetable oil, for frying
  15. Salsa Verde Sauce (recipe follows)
Instructions
  1. In a large skillet, heat olive oil over medium-high heat. Add steak and next 4 ingredients. Cook, stirring occasionally, for 8 to 10 minutes or until steak is browned and vegetables are tender. Stir in corn and next 5 ingredients. Spoon mixture into a medium bowl; cover, and chill for 1 hour.
  2. Spoon about 1⁄4 cup mixture into center of each wonton wrapper. Fold top corner of each wrapper over filling, tucking tip of corner under filling, and fold left and right corners over filling. Lightly brush remaining corner with water; tightly roll filled end toward remaining corner, and gently press to seal.
  3. In a large Dutch oven, pour oil to a depth of 4 inches; heat over medium heat until a deep-fry thermometer registers 350°. Fry egg rolls, in batches, for 5 to 6 minutes or until golden. Drain on paper towels. Serve with Salsa Verde Sauce.

  1. 1 (16-ounce) jar salsa verde
  2. 1 cup sour cream
Instructions
  1. In a small bowl, stir together all ingredients. Cover, and refrigerate for up to 5 days.
