Ingredients
  1. 4 (6-ounce) packages miniature rainbow carrots, halved lengthwise
  2. 4 cloves elephant garlic, peeled and halved
  3. 3 shallots, quartered
  4. 1⁄4 cup olive oil
  5. 1 tablespoon kosher salt
  6. 2 teaspoons ground black pepper
  7. Garnish: fresh thyme sprigs
Instructions
  1. Preheat oven to 375°. Line a rimmed baking sheet with foil.
  2. Place carrots, garlic, and shallots on prepared pan. Drizzle with olive oil, and sprinkle with salt and pepper.
  3. Bake for 25 minutes or until tender. Garnish with fresh thyme sprigs, if desired.
