Miniature Shepherd’s Pies

  1. 1 pound ground beef
  2. 1/2 cup chopped onion
  3. 2 cloves garlic, minced
  4. 1/2 cup frozen peas and carrots, thawed
  5. 1/3 cup ketchup
  6. 1 tablespoon apple cider vinegar
  7. 1 teaspoon kosher salt
  8. 1/2 teaspoon ground black pepper
  9. 1/2 (24-ounce) package frozen cut russet potatoes*
  10. 1/2 (5.2-ounce) package garlic and herbs cheese*
  11. 1 (10.5-ounce) can refrigerated original buttermilk biscuits
  12. 1/2 cup crushed potato chips
  13. Garnish: chopped fresh chives
  1. Preheat oven to 375°. Spray 10 muffin cups of a 12-cup muffin pan with cooking spray.
  2. In a large skillet, cook ground beef, onion, and garlic over medium heat until beef is browned and crumbles; drain. Stir in peas and carrots and next 4 ingredients; remove from heat, and set aside.
  3. Cook potatoes according to package directions. Add cheese, stirring to combine.
  4. Press biscuit dough into bottoms and up sides of prepared muffin cups. Top with meat mixture, pressing down gently. Cover with mashed potatoes.
  5. Bake for 18 to 22 minutes or until biscuits are golden brown. Sprinkle with potato chips, and garnish with chives, if desired. Serve immediately.
