Magnolia Bakery Vanilla Cupcakes

Ingredients
  1. 1 ½ cups self-rising flour
  2. 1 ¼ cups all-purpose flour
  3. 1 cup unsalted butter, softened
  4. 2 cups sugar
  5. 4 large eggs, at room temperature
  6. 1 cup whole milk
  7. 1 teaspoon vanilla extract
  8. Vanilla Buttercream (recipe follows)
  9. Garnish: clear sparkling sugar
Instructions
  1. Preheat oven to 350°. Line two 12-cup muffin pans with paper liners.
  2. In a small bowl, combine the flours. Set aside.
  3. In a large bowl, beat butter and sugar with a mixer at medium speed until fluffy. Add eggs, one at a time, beating well after each addition.
  4. Gradually add flour, alternately with milk, beginning and ending with flour, beating just until combined after each addition. Stir in vanilla. Spoon batter into prepared cups, filling each three-quarters full.
  5. Bake for 20 to 25 minutes or until a wooden pick inserted in centers comes out clean. Let cool in pans for 15 minutes. Remove from pans, and let cool completely on a wire rack. Spread or pipe Vanilla Buttercream over cupcakes. Garnish with sparkling sugar, if desired.

Vanilla Buttercream
Makes about 3 cups

Ingredients
  1. 1 cup unsalted butter, softened
  2. 4 cups confectioners’ sugar
  3. 1 teaspoon vanilla extract
  4. 2 to 3 tablespoons whole milk
  5. Food coloring (optional)
Instructions
  1. In a large bowl, beat butter with a mixer at medium speed until creamy. Gradually add confectioners’ sugar, beating until smooth. Beat in vanilla.
  2. Add milk, 1 tablespoon at a time, beating after each addition, until frosting is a spreadable consistency. Beat in food coloring, if desired.
  3. Use immediately, or store frosting covered for up to 3 days.
