Basic Mac & Cheese
Makes 8 to 10 servings

Ingredients
  1. 1/4 cup butter
  2. 2/3 cup finely chopped onion
  3. 1/3 cup all-purpose flour
  4. 31/2 cups milk
  5. 1 teaspoon Dijon mustard
  6. 1/2 teaspoon garlic powder
  7. 1/4 teaspoon seasoned salt
  8. 1/4 teaspoon paprika
  9. 1 (16-ounce) package pasteurized prepared cheese product, cubed*
  10. 2 cups shredded mild Cheddar cheese
  11. 1 (16-ounce) package elbow pasta, cooked according to package directions and kept warm
Instructions
  1. In a large Dutch oven, melt butter over medium heat. Add onion and cook for 6 to 8 minutes or until tender. Add flour; cook, stirring constantly, for 2 minutes. Gradually stir in milk and next 4 ingredients; cook, stirring often, until thickened and bubbly.
  2. Reduce heat to low; add cubed cheese and shredded cheese, and cook until cheeses have melted and mixture is smooth.
  3. Stir in cooked pasta.

  1. *We used Kraft Velveeta cheese.

Mediterranean Mac & Cheese

Ingredients
  1. 1 recipe Basic Mac & Cheese (recipe above), substituting Queso Blanco-flavored pasteurized prepared cheese product* and extra-sharp white Cheddar cheese for cheeses
  2. 3 cups shredded cooked chicken
  3. 1/2 cup chopped
  4. oil-packed sun-dried tomatoes
  5. 1/2 cup chopped roasted red peppers
  6. 1 (3.8-ounce) can sliced black olives, drained
  7. 2 tablespoons minced fresh oregano
  8. 2/3 cup crumbled
  9. feta cheese
  10. 1/4 cup chopped fresh parsley
Instructions
  1. In a large bowl, stir together Mac & Cheese, chicken, and next 4 ingredients until combined. Sprinkle with feta cheese and parsley; serve immediately.

  1. *We used Kraft Velveeta Queso-Blanco cheese.

Mexi-Mac Egg Rolls
Makes 10 to 12 servings

Ingredients
  1. 1 recipe Basic
  2. Mac & Cheese (recipe on page 30)
  3. 1 (10-ounce) can diced tomatoes and green chiles, drained
  4. 1/2 cup chopped green onion
  5. 1/2 teaspoon
  6. ground cumin
  7. 2 (16-ounce) packages egg roll wrappers
  8. Vegetable oil, for frying
  9. 1 (16-ounce) jar salsa
Instructions
  1. In a large bowl, stir together Mac & Cheese, and next 3 ingredients until combined. Let cool to room temperature or cover and chill overnight.
  2. Spoon about 1/3 cup macaroni mixture in center of one egg roll wrapper. Fold top corner of wrapper over filling, tucking tip of corner under filling. Fold left and right corners over filling. Lightly brush remaining corner with water; tightly roll filled end toward remaining corner, and press gently to seal. Repeat procedure with remaining wrappers and filling.
  3. In a large Dutch oven, pour oil to a depth of 4 inches, and heat to 350° over medium heat.
  4. Fry egg rolls, in batches, for 3 to 5 minutes or until golden brown. Drain on paper towels. Serve immediately with salsa.

Amazing Mac & Cheese Burgers

  1. 1/2 recipe Basic
  2. Mac & Cheese (recipe on page 30)
  3. 1/3 cup crumbled cooked bacon
  4. 1/4 cup barbecue sauce
  5. 1 large egg, lightly beaten
  6. 2 pounds ground chuck
  7. 2 tablespoons Worcestershire sauce
  8. 2 teaspoons seasoned salt
  9. 1 teaspoon garlic powder
  10. 6 hamburger buns, halved and toasted
  11. 6 leaves fresh green leaf lettuce
  12. 2 tomatoes, sliced
Instructions
  1. Preheat oven to 350°. In a medium bowl, stir together Mac &
  2. Cheese and next 3 ingredients until combined. Spread into a 13x9-inch baking pan. Bake for 15 minutes or until golden brown. Let cool for 5 minutes. Using a 41/2-inch round cutter, cut 6 circles out of macaroni.
  3. Preheat grill pan over medium-high heat. In a large bowl, combine ground chuck and next 3 ingredients. Divide mixture into 6 equal portions; shape each portion into a 5-inch patty. Grill for
  4. 5 to 7 minutes per side or until desired degree of doneness.
  5. On bottom halves of buns, place lettuce leaves. Top with burger patties, macaroni rounds, tomato slices, and top halves of buns. Serve immediately.
