Cornbread and Ham Casserole

Ingredients
  1. 6 cups cubed Cornbread Muffins (recipe follows)
  2. 1 cup shredded Cheddar cheese, divided
  3. 2 (14.5-ounce) cans corn chowder
  4. 2 cups diced cooked ham
  5. 1 cup chopped carrot
  6. 1 cup frozen peas, thawed
  7. 1 large egg, lightly beaten
  8. 2 teaspoons dried thyme
  9. 1 teaspoon kosher salt
  10. 1/2 teaspoon ground black pepper
Instructions
  1. Preheat oven to 350°. Spray a 13x9-inch baking dish with cooking spray.
  2. In a large bowl, toss together cornbread, 1/2 cup cheese and next 8 ingredients. Spread evenly into prepared dish. Bake for 30 minutes or until golden brown. Serve immediately.

Ingredients
  1. 1 1/2 cups plain yellow cornmeal
  2. 1 cup all-purpose flour
  3. 4 teaspoons baking powder
  4. 1 teaspoon kosher salt
  5. 1 teaspoon baking soda
  6. 1 cup buttermilk
  7. 1/2 cup honey
  8. 1/3 cup unsalted butter, melted
  9. 3 large eggs
Instructions
  1. Preheat oven to 400°. Spray a 24-count mini muffin pan with cooking spray.
  2. In a large bowl, whisk together cornmeal and next 4 ingredients.
  3. In a small bowl, whisk together buttermilk and next 3 ingredients; add to flour mixture, whisking until combined. Spoon evenly into prepared pan. Bake for 10 minutes or until golden brown.

Ingredients
  1. 1 (16-ounce) box elbow pasta
  2. 1/4 cup unsalted butter
  3. 1/4 cup all-purpose flour
  4. 1 1/2 cups whole milk
  5. 2 cups Whole Roasted Sweet Potato Mash (recipe follows)
  6. 2 1/2 cups shredded fontina cheese
  7. 1 cup shredded Cheddar cheese
  8. 1 cup diced cooked ham
  9. 1 teaspoon kosher salt
  10. 1/2 teaspoon ground black pepper
  11. 1/4 teaspoon ground nutmeg
  12. 1/4 teaspoon ground allspice
  13. 2 cups crumbled round buttery crackers
Instructions
  1. Preheat oven to 350°. Spray a 13x9-inch baking dish with cooking spray.
  2. Cook pasta according to package directions. Set aside.
  3. In a medium saucepan, melt butter over medium-high heat. Whisk in flour, and cook, whisking constantly, for 2 minutes. Whisk in milk, and cook, whisking frequently, for about 8 minutes or until mixture begins to thicken, Stir in sweet potato, next 7 ingredients, and pasta until combined. Pour into prepared baking dish; sprinkle with crushed crackers, and cook for 45 minutes until hot and bubbling. Serve immediately.

Whole Roasted Sweet Potato Mash

Ingredients
  1. 2 sweet potatoes
  2. 1 tablespoon canola or vegetable oil
  3. 1 teaspoon salt
Instructions
  1. Preheat oven to 375°. Line a rimmed baking sheet with foil.
  2. Place sweet potatoes on prepared pan; drizzle with oil, and sprinkle with salt. Cook for 1 hour or until tender.
  3. Once potatoes are cool enough to handle, remove skin. Using a fork or a potato masher, mash to desired consistency.
