And you’ll definitely need milk! This is a fun way to feature a much needed drink for all of those brownies.

Here are two of our favorites.

Crème de Menthe Brownies

Ingredients
  1. 1 3/4 cups butter, softened and divided
  2. 1 cup sugar
  3. 1 cup firmly packed light brown sugar
  4. 4 large eggs
  5. 1 teaspoon vanilla extract
  6. 1 1/4 cups all-purpose flour
  7. 3/4 cup Dutch-process cocoa powder
  8. 1/2 teaspoon baking powder
  9. ½ teaspoon salt
  10. 3 cups confectioners’ sugar
  11. 1/4 cup crème de menthe liqueur
  12. Green food coloring
  13. 1 cup semisweet chocolate morsels
Instructions
  1. Preheat oven to 350°. Spray a 13x9-inch baking pan with nonstick baking spray with flour.
  2. In a large bowl, beat 1 cup butter at medium speed with an electric mixer until fluffy. Add sugar and brown sugar to butter. Beat at medium speed until fluffy. Add eggs, one at a time, beating well after each addition. Add vanilla, beating well.
  3. In a large bowl, sift together flour, cocoa powder, baking powder, and salt. Gradually add flour mixture to butter mixture, beating well after each addition. Spoon into prepared pan. Bake for 30 to 35 minutes, or until a wooden pick inserted in the center comes out clean. Cool completely in pan on a wire rack.
  4. In a large bowl, beat remaining ¾ cup butter at medium-high speed with an electric mixer until fluffy. Gradually add confectioners’ sugar, beating until smooth. Add crème de menthe and desired amount of green food coloring, beating until smooth. Spread on cooled brownies.

  6. microwave chocolate on High, in 30-second intervals, stirring between each, until chocolate is melted and smooth (about 1½ minutes total). Drizzle over brownies. Refrigerate until set. Cut into 3x1-inch rectangles.

Turtle Brownies

  1. 1 cup butter, softened

  3. 1 cup firmly packed light brown sugar

  6. 1 cup all-purpose flour
  7. 1/3 cup unsweetened cocoa powder
  8. 1/2 teaspoon salt
  9. 1/2 cup chopped toasted pecans
  10. Cream Cheese–Caramel Icing
  11. (recipe follows)
  12. 24 pecan halves
Instructions
  1. Preheat oven to 350°. Spray a 13x9-inch baking pan with nonstick baking spray with flour.
  2. In a large bowl, beat butter at medium-high speed with an electric mixer until fluffy. Add sugar and brown sugar, beating until fluffy. Add eggs, one at a time, beating well after each addition. Add vanilla, beating well.
  3. In a large bowl, sift together flour, cocoa powder, and salt. Gradually add flour mixture to butter mixture, beating until smooth. Stir in chopped pecans. Spread batter evenly into prepared pan. Bake for 30 to 35 minutes, or until a wooden pick inserted in the center comes out clean. Cool completely in pan on a wire rack. Spread with Cream Cheese–Caramel Icing. Cut into 24 squares. Place a pecan half on each square. Refrigerate until ready to serve.

Cream Cheese–Caramel Icing

  1. 1 (8-ounce) package cream cheese, softened
  2. 4 tablespoons butter, softened
  3. 1/2 cup hot caramel sauce
  4. 2 cups confectioners’ sugar
Instructions
  1. In a large bowl, combine cream cheese and butter. Beat at medium-high speed with an electric mixer until fluffy. Add caramel sauce to cream-cheese mixture, beating until smooth. Gradually add confectioners’ sugar to cream-cheese mixture, beating until smooth.
