Meatballs with Honey-Orange Glaze

Makes 36
Ingredients
- 2 pounds ground pork
- 1 cup fresh bread crumbs
- 1 large egg
- 1 teaspoon kosher salt
- ½ teaspoon onion powder
- ¼ teaspoon ground black pepper
- 2 tablespoons vegetable oil
- ½ cup honey
- 1/3 cup orange juice
- Garnish: chopped green onion
Instructions
- Preheat oven to 400°.
- In a large bowl, combine pork, bread crumbs, egg, salt, onion powder, and pepper. Stir gently, and roll into 36 balls.
- In a large skillet, heat oil over medium-high heat. Add half of meatballs, and cook, turning occasionally, until browned, about 3 minutes. Remove using a slotted spoon, and place on a rimmed baking sheet. Repeat procedure with remaining meatballs.
- Bake until done, about 8 minutes.
- Add honey and orange juice to skillet; cook, stirring frequently, over medium-high heat until thickened, about 2 minutes. Remove from heat. Add meatballs; stir until coated in glaze. Garnish with green onion, if desired.
Notes
- Meatballs can be made a day ahead. Reheat in a skillet over medium heat.

Green Chile– Chicken Mini Pizzas

Makes 24
Ingredients
- 24 mini pita rounds*
- 1½ cups chopped cooked chicken
- 1 (4-ounce) can chopped green chiles, mild or spicy, drained
- 2/3 cup shredded Monterey Jack cheese
- Garnish: chopped fresh cilantro
Instructions
- Preheat oven to 350°.
- On a large rimmed baking sheet, arrange pita rounds in an even layer. In a medium bowl,
- stir together chicken and chiles; spoon on top of pitas.
- Sprinkle with cheese.
- Bake until cheese melts, about 5 minutes. Garnish with cilantro, if desired.

- *We used Joseph’s Mini Pita Rounds.

Domino Brownies

Makes about 18
Ingredients
- 1 (18.4-ounce) box milk chocolate brownie mix*
- 1 (1-pound) can vanilla frosting
- Miniature chocolate morsels
Instructions
- Preheat oven to 350°. Line a 9-inch square baking pan with foil, letting ends extend over edges. Spray bottom only with baking spray.
- Prepare brownie mix according to package directions. Pour into prepared pan.
- Bake until a wooden pick inserted 1 inch from edge of pan comes out clean, about 30 minutes. Let cool completely on a wire rack. Invert onto a cutting board, and gently remove foil.
- Spread frosting over brownies. Cover lightly, and refrigerate until frosting is set. Cut into bars using a serrated knife, and top with chocolate morsels to create domino shapes.
