Individual Strawberry Trifles

Makes 8 servings 

 

2 1/2 cups chopped fresh strawberries

1 tablespoon sugar

2 tablespoons orange juice

1 teaspoon lime zest (optional)

2 cups ricotta cheese

2 cups Greek-style plain yogurt

3/4 cup confectioners’ sugar, or more to taste

1 teaspoon vanilla extract

8 slices angel food cake, torn into pieces

1/2 cup chopped almonds

In a large bowl, combine strawberries, sugar, orange juice, and zest. In the work bowl of a food processor or the container of an electric blender, add ricotta cheese, yogurt, confectioners’ sugar, and vanilla; process or blend until very smooth. In 8 serving glasses, layer half of cake pieces, about 1/4 cup cheese mixture, and about 1/4 cup strawberries. Repeat layers. Cover and chill overnight. Just before serving, top each serving with 1 tablespoon nuts. (Reserve any remaining cheese mixture to serve with fruit or granola.)
