Makes 20 servings
10 crusty rolls
1 pound thinly sliced rare deli roast beef
2 cups arugula
Avocado–Sour Cream Spread (recipe follows)
Place bottoms of rolls on cutting board. Cut rolls in half vertically. Turn rolls cut side up. Trim bottom edge of rolls so that they stand upright. Make a pocket in rolls by making a slit in the cut side, leaving the roll intact on bottom and sides.
Spread 1 tablespoon Avocado–Sour Cream Spread inside each roll. Stuff with roast beef and arugula. Serve immediately.
Avocado–Sour Cream Spread
Makes about 3/4 cup
1 ripe avocado, peeled and pitted
1/2 cup sour cream
2 tablespoons mayonnaise
2 teaspoons prepared horseradish
1 1/2 teaspoons ranch dip mix
In the work bowl of a food processor, combine avocado, sour cream, mayonnaise, horseradish, and ranch dip mix. Pulse until smooth, scraping sides of bowl as needed. Use immediately.
