Chocolate Glazed Cookies

Ingredients
  1. 1 cup plus 1 tablespoon salted butter, softened and divided
  2. 1 cup sugar
  3. 1 large egg
  4. 1/2 teaspoon vanilla extract
  5. 2 cups all-purpose flour
  6. 1/2 cup unsweetened cocoa powder
  7. 1/2 teaspoon salt
  8. 1/4 teaspoon baking soda
  9. 21/2 cups confectioners’ sugar, sifted
  10. 3 tablespoons unsweetened cocoa powder
  11. 5 tablespoons water, divided
  12. Royal Icing (recipe follows)
Instructions
  1. In a large bowl, combine 1 cup butter and sugar; beat at medium speed with an electric mixer until creamy. Add egg; beat until combined. Beat in vanilla. In a small bowl, combine flour, cocoa powder, salt, and baking soda; gradually add flour mixture to butter mixture, beating at low speed until combined and stopping to scrape bowl occasionally. Divide dough in half. Press each portion of dough into a disk; wrap in plastic wrap. Refrigerate until firm, about 2 hours.
  2. Preheat oven to 375°. Line a large baking sheet with parchment paper. On a lightly floured surface, unwrap one portion of dough. Roll into about 1/8-inch thickness; cut with a 3-inch round cutter. Using a spatula, place cut dough,1 inch apart, on prepared baking sheet. Bake until firm, about 10 minutes. Let cool on baking sheet for 2 minutes. Place on a wire rack; let cool completely. Repeat procedure with remaining dough, rerolling scraps as needed.
  3. In a medium bowl, combine confectioners’ sugar and cocoa powder. In a small microwave-safe bowl, combine remaining 1 tablespoon butter and 3 tablespoons water. Microwave on High until butter melts, about 30 seconds. Pour butter mixture into cocoa mixture, stirring well. Stir in enough of remaining 2 tablespoons water to achieve desired spreading consistency.
  4. Spoon about 2 teaspoons glaze into center of each cookie, spreading almost to edges of cookies. Set aside until glaze is set, about 1 hour. Spoon Royal Icing into a piping bag fitted with a small tip. Pipe desired words or phrases onto cookies; let stand until set, about 1 hour.

Instructions
  1. In a medium bowl, whisk together meringue powder and water until frothy. Whisk in confectioners’ sugar, 1/2 cup at a time, until well combined.
