  1. 1 cup butter, softened
  2. 1 1/2 cups firmly packed brown sugar
  3. 1/2 cup granulated sugar
  4. 3 large eggs
  5. 1 teaspoon vanilla extract
  6. 2 3/4 cups all-purpose flour
  7. 1 teaspoon baking soda
  8. 1/2 teaspoon baking powder
  9. 1/2 teaspoon salt
  10. 1/4 teaspoon ground nutmeg
  11. 1/4 teaspoon ground cinnamon
  12. 3 cups quick-cooking oats
  13. 2 cups caramel bits
  14. 1 cup chopped pitted dates
  15. 1 cup white chocolate chunks
  16. 1 cup toffee bits
  1. Preheat oven to 350°. Line baking sheets with parchment paper.
  2. In a large bowl, beat butter and sugars with a mixer at medium-high speed until fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla.
  3. In a medium bowl, whisk together flour and next 5 ingredients. Gradually add to butter mixture, beating until combined. Add oats and remaining 4 ingredients, beating until combined. Using a 1 3/4-inch spring-loaded scoop, scoop dough onto prepared pans. Bake for 10 to 12 minutes or until lightly browned. Let cool on pans for 2 minutes. Remove from pans, and let cool completely on wire racks. Store in airtight containers for up to 5 days.
