BLT Bites

With tomatoes so easy to come by at the roadside stand or your local farmers’ market, this BLT recipe will certainly treat your palate and make you want another.

Ingredients
  1. 1 pint small gourmet tomatoes, cut in half
  2. 1/2 teaspoon kosher salt
  3. 1/2 teaspoon ground black pepper
  4. Pimento Cheese Filling (recipe follows)
  5. 6 slices bacon, cooked and cut into 1-inch pieces
  6. 1 1/2 dozen wooden picks
Instructions
  1. Using a serrated melon baller, carefully scoop out centers from both halves of each tomato; discard centers. Sprinkle inside of each tomato half with salt and pepper. Pipe about 1 teaspoon Pimento Cheese Filling into each tomato half; top with 1 piece bacon. Skewer with wooden picks. Serve immediately.

Ingredients
  1. 2 (8-ounce) packages extra-sharp Cheddar cheese, shredded and divided
  2. 4 ounces cream cheese, softened
  3. 1/4 cup mayonnaise
  4. 1 (12-ounce) jar roasted red peppers, drained and chopped
  5. 1/2 teaspoon sugar
  6. 1/2 teaspoon kosher salt
  7. 1/2 teaspoon ground black pepper
  8. 1/2 teaspoon ground red pepper
  9. 1/2 teaspoon Tabasco sauce
  10. 1/2 teaspoon Worcestershire sauce
Instructions
  1. In the work bowl of a food processor, combine half of shredded cheese, cream cheese, and mayonnaise; process until combined. Add peppers, and process until combined. Add sugar and next 5 ingredients, processing until smooth. Stir in remaining Cheddar cheese. Cover, and refrigerate for up to 5 days.
