Ingredients
  1. 3 cups all-purpose flour
  2. 1 tablespoon baking powder
  3. 1 1/2 teaspoons kosher salt
  4. 3/4 cup water
  5. 3 1/2 tablespoons extra-virgin olive oil, divided
  6. Garlic-Parsley Oil (recipe follows)
  7. Grilled Barbecue Chicken (recipe follows)
  8. 1 cup Caramelized Onions (recipe follows)
  9. 12 okra pods, halved lengthwise
  10. 1/2 cup fresh corn, cut from cob
  11. 1 cup shredded Colby-Jack cheese
  12. Garnish: fresh parsley leaves
Instructions
  1. Preheat grill to medium-high heat (350° to 400°).
  2. In the work bowl of a food processor, pulse together flour, baking powder, and salt. With processor running, pour in 3/4 cup water and 1 1/2 tablespoons olive oil, and process until a ball forms.
  3. Turn dough out onto a lightly floured surface, and knead for 3 minutes or until smooth and elastic. Roll dough into a 1/8-inch-thick, 12- to 15-inch rectangle. Brush top of dough with 1 tablespoon olive oil. Place on grill, olive oil side down, and grill, covered with grill lid, for 3 to 4 minutes or until top of dough is bubbly and bottom is browned. Brush top of dough with remaining 1 tablespoon olive oil; invert dough onto a rimless baking sheet.
  4. Brush cooked portion of dough with 1/3 cup Garlic-Parsley Oil. Top with Grilled Barbecue Chicken, Caramelized Onions, and next 3 ingredients. Return pizza to grill. Grill, covered with grill lid, over indirect heat for 7 to 10 minutes or until cheese is melted and bottom of crust is browned. Drizzle with remaining Garlic-Parsley Oil. Garnish with fresh parsley leaves, if desired.

  1. 1/2 cup packed fresh parsley leaves
  2. 1/2 cup extra-virgin olive oil
  3. 3 cloves garlic
Instructions
  1. In the container of a blender, combine all ingredients. Process on high for 2 minutes. Cover, and refrigerate for up to 5 days.

Ingredients
  1. 2 boneless skinless chicken breasts, cut in half, and pounded to 1/4-inch thickness
  2. 1 1/2 teaspoons kosher salt
  3. 1 teaspoon ground black pepper
  4. 1/2 cup barbecue sauce
Instructions
  1. Spray grill rack with nonflammable grilling spray. Preheat grill to medium-high heat (350° to 400°).
  2. Sprinkle chicken with salt and pepper. Brush each side of chicken with barbecue sauce.
  3. Grill chicken for 3 minutes per side or until a thermometer inserted in thickest portion registers 165°. Remove from grill, and let stand for 10 minutes. Cut into 1/2-inch-thick slices.

  2. 2 medium Vidalia or sweet onions, thinly sliced

Instructions
  1. In a large skillet, melt butter over medium heat. Add onions, and cook, stirring frequently, for 20 minutes or until onions begin to brown and caramelize. Stir in salt. Cover, and refrigerate for up to 5 days.
