Coffee Quick Bread
Makes 1 (9-inch) loaf

  1. 1/4 cup unsalted butter, softened
  2. 3/4 cup firmly packed brown sugar
  3. 2 large eggs
  4. 1 teaspoon vanilla extract
  5. 1/2 cup heavy whipping cream
  6. 1/2 cup strong brewed coffee*
  7. 21/2 cups all-purpose flour
  8. 2 teaspoons baking powder
  9. 1/2 teaspoon baking soda
  10. 1/2 teaspoon kosher salt
  11. 1/2 cup dried cherries
  12. 1/2 cup white chocolate morsels
  13. 1/2 cup toasted slivered almonds
  14. Coffee Glaze (recipe follows)
  1. Preheat oven to 350°. Spray a 9x5-inch loaf pan with baking spray with flour.
  2. In a large bowl, beat butter and brown sugar with a mixer at medium-high speed until fluffy. Add eggs, one at a time, beating well after each addition; stir in vanilla.
  3. In a small bowl, whisk together cream and coffee. In a large bowl, whisk together flour and next 3 ingredients. Gradually add flour mixture to butter mixture alternately with cream mixture, beginning and ending with flour mixture, beating just until combined after each addition. Stir in cherries, chocolate, and almonds.
  4. Pour mixture into prepared pan. Bake for 45 minutes or until a wooden pick inserted in center comes out with a few moist crumbs. Let cool in pan for 10 minutes. Remove from pan, and let cool completely on a wire rack. Drizzle with Coffee Glaze, and serve immediately. Store, covered, in refrigerator for up to 3 days.

Coffee Glaze
Makes about 1 cup

  1. 2 tablespoons strong brewed coffee*
  2. 2 tablespoons heavy whipping cream
  3. 2 cups confectioners’ sugar
  1. In a small saucepan, bring coffee and cream to a boil; reduce heat, and simmer. Whisk in confectioners’ sugar until smooth. Use immediately.

Chocolate Chip-Caramel Frappé
Makes 4 servings

  1. 4 cups cold water
  2. 1 cup coarse ground coffee beans
  3. 1/2 cup half-and-half
  4. 1/2 cup chocolate syrup
  5. 1/2 cup caramel syrup
  6. Garnish: whipped topping,
  7. miniature chocolate morsels,
  8. caramel bits, chocolate syrup
  1. In a large pitcher, combine 4 cups water and coffee beans. Let steep for 24 hours at room temperature.
  2. In the container of a blender, combine half-and-half and next 2 ingredients. Strain coffee through a fine-mesh sieve over half-and-half; process on high until combined.
  3. Fill 4 glasses with ice cubes; pour coffee mixture over ice. Top with whipped topping, chocolate morsels, caramel bits, and chocolate syrup, if desired. Serve immediately.
